It all began in the 1930s when Giovanni Torello, originally from Nizza Monferrato, bought the Castello di Grillano with its historic cellars, vineyards and two "Carlotta" and "Rivarola" farms. This is the grandfather of Francesco, the current owner, last descendant of the family of the Marquises Rovereto, Genoese patricians.
With the abandonment of the old factors the father of Francesco, Paolo, begins to take care of the vineyards in the first person, abandoning the industrial activities undertaken by the family in Genoa. The young Francesco, a globetrotter engineer, helps him occasionally during the summer holidays but in 2003 he decided to follow his footsteps dedicating himself with passion and entrepreneurial spirit to the wine business. Thus began an extensive restructuring of the vineyard and the arrangement of the cellars, the buildings were restored and modernized and, by restoring an old farmhouse, the inn was built. The next generation ─ Philip, young director, and Federica graduated in marketing and communication - although young, helps and shares the great dream of the Castle of Grillano started by great-grandparents almost a century ago.
The trademark "Castello di Grillano" takes its name from the homonymous village two kilometers from Ovada, historic town of Monferrato founded by the ancient Romans at the confluence of the rivers Orba and Stura, 34 km from Alessandria and 20 minutes by car from the sea of Genoa of which he followed the historical vicissitudes from the Maritime Republic until the Risorgimento and the Unification of Italy.
The rigor of organic farming and the best quality traditions in the vineyard and in the cellar are the values, professional and human, that characterize the company "Castello di Grillano" which takes its name from a small village surrounded by greenery and vineyards hills of the Upper Monferrato.

The characteristic identity of the Ovada is its uncontaminated and luxuriant nature that offers glimpses of great suggestion and the rich gastronomic and enological tradition that, strongly influenced by the nearby Liguria, has generated a unique and original cuisine.

At the end of 2008, he started converting the cultivation and vinification methods to organic farming, arriving in 2012 to obtain the prestigious certification according to strict European legislation.
In 2013, a photovoltaic system for the production of electric energy went into production, which almost completely meets the needs of the company by exploiting solar energy.
Likewise, solar energy is used for the production of domestic hot water both for family use and for guests of the Guest House.

WINE HOSPITALITY EVENTS
Castello di Grillano produces organic wines since 2012 applying carefully all the rules of cultivation, processing and bottling required by the European specification obtaining the certification from ICEA (Institute for Ethical and Environmental Certification). In the vineyard, it not only avoids the use of synthetic pesticides, herbicides and "chemical" fertilizers, but also preserves the fertility of the soil thanks to appropriate processing and green fertilization (green manure), in accordance with the rhythms of nature. Soil is revitalized. The vineyard is managed in a balanced way with the pruning respectful of the plant's physiology, the careful management of the crown (green pruning and defoliation), the scrupulous control of the health status of the grapes, and, above all, with the containment of production (thinning of the bunches). These operations, performed strictly by hand by experienced winemakers, allow to obtain a grape, hand-harvested in small boxes, of high quality and sincere expression of the terroir. The wines, produced according to nature and with a professional knowledge that has its roots in time, are an emblem of good food and of the bien vivre and sincere expression of the terroir. The production process excludes the use of sulfur dioxide and any other potentially allergenic substance.
Attention to the environment and to health is not limited to organic farming but also to the use of renewable energy. In fact, in 2013 a photovoltaic system for the production of electric energy went into production, which almost completely meets the needs of the company by exploiting solar energy. Likewise, solar energy is used for the production of domestic hot water both for family use and for guests of the Guest House.
From the 2015 harvest, the Castello di Grillano wines also receive the Bio Vegan certification from the Bologna Institute which, after a long procedural process, has defined a very precise specification that provides for the elimination of every substance of animal origin in the processing of wine. These wines are therefore also indicated in a vegan diet.
The vegan wine was for the Castello di Grillano a natural evolution of the application of the rigorous principles of organic agriculture. With the experience gained in years of experimentation Castello di Grillano has developed a wine-making protocol eliminating from the wine production process not only the use of sulfur dioxide but also any substance of animal origin, maintaining the quality unchanged, the stability and the goodness of the wine.
