Mediterranean Prawns
"I first ate this dish in Murcia, Spain at a buffet lunch with some Spanish neighbours. It reminds me of the Spanish sunshine!"

Ingredients:
Juice of 1 lime
50g large peeled prawns
2 vine tomatoes, chopped
A bunch of fresh coriander, chopped
1/2 fresh mango, peeled and chopped
1/2 Spanish onion, chopped
1/2 teaspoon paprika
2 tbsp mayonnaise
2 tbsp tomato purée
Black pepper to taste
Parsley to garnish
How to cook this dish:
1. Squeeze the juice of the lime over the peeled prawns. Mix with all the chopped ingredients and the paprika in your serving dish.
2. Mix the tomato purée and mayonnaise together and pour over the prawn mix. Season with pepper.
3. Garnish with parsley and chill in the fridge.
4. Serve as a cold tapas or with fresh salad for a starter or main dish.
