Butternut Soup
"Butternut soup is the winter favourite in South Africa when the nights are cold. Many South Africans, including myself, consider it a national dish, and any authentic South African restaurant has this dish on its menu. It is even served on safaris!"

Ingredients (Serves 4-6):
1 butternut squash, peeled and diced into cubes
20g butter
1 small onion, finely chopped
1 garlic clove, finely chopped
½ tsp chilli powder (not flakes)
1 pint chicken or vegetable stock
1 small tub of single cream
How to cook this dish:
1. Fry the onion, garlic and chilli powder in butter until soft.
2. Add the butternut squash and the stock and bring to the boil.
3. Simmer over a medium heat until the butternut is soft.
4. Blend the soup into a smooth consistency.
5. Stir in some cream just before serving.

Serve with:
