Trenette al Pesto
Pasta with Basil Sauce
"This has always been my favourite dish from childhood, it is impossible to remember the first time I ate it. It's a dish that even before the palate is tasted with the nose. The scent of the pesto for me is the smell of summer!"

Ingredients (Serves 4):
2 potatoes
A handful green beans
320g trenette or spaghetti
4 bunches basil
40g parmesan cheese
40g pecorino cheese
A handful pine nuts
2 cloves of garlic
5-6 tbsp olive oil
1/4 tsp coarse salt
How to cook this dish:
1. Place the two chopped potatoes and green beans in salted boiling water and, after 5-6 minutes add the pasta. Let them boil for about 10 minutes (see cooking time on the box of the pasta).
2. In the meantime, place the garlic, salt, basil leaves, pine nuts and cheeses in a mortar and crush, gradually adding oil until you have a smooth cream.
3. When cooked, drain the pasta and vegetables and season with the basil sauce.
4. Serve hot.

Serve with:
Great if followed by a plate of fresh anchovies, seasoned with raw lemon and oregano and served with a dry white wine such as Vermentino.
