Italian Eggplant
"I first had this dish during my first trip to Sicily. I enjoyed it so much that I asked the chef to give me the recipe. It was very special to me because I am a second generation Sicilian. The dish is great for dinner with a salad."

Ingredients:
1 small eggplant, unpeeled and cubed 1 small dry onion, chopped
6 tablespoons olive oil
1 clove of garlic, minced or chopped
1 chili pepper, minced - optional
6 tablespoons tomato sauce
4 tablespoons grated Parmesan cheese
Salt and pepper to taste
How to cook this dish:
1. Sauté the eggplant and onion in oil, turning frequently with a pancake turner.
2. Add salt and pepper to taste, then add the garlic and continue cooking until the ingredients are tender for about 15 - 20 minutes.
3. Add the chili pepper and tomato sauce and stir occasionally for a few more minutes.
4. Add the cheese prior to serving.
