Lamb Stew with Garlic and Oregano



We run a traditional Greek taverna - this is THE most popular dish and is absolutely delicious! Great for a relaxing evening meal with a glass of our smooth Cabernet home-made wine.

The ingredients are readily available at the daily market in Corfu Town."

Ingredients (Serves 4):


Kleftiko


1 leg of lamb, cut into approximately 3 cm slices
2-3 tbsp extra virgin olive oil
1-2 medium onions, finely chopped
4-5 garlic cloves, crushed
1½ tsp oregano
Salt and freshly ground black pepper





How to cook this dish:


   
1. Warm the olive oil in a large saucepan, enough to cover its bottom.
  
2. Add the onion and garlic and gently fry until transparent. Remove from the pan.
  
3. Add the pieces of lamb to the pan, one by one, frying until each side is brown. You may need to add more olive oil at this stage, so that the meat does not stick to the bottom of the pan.
  
4. Once the meat is browned, return the onion and garlic and add oregano.
  
5. Season to taste.
  
6. Add just enough water to cover the lamb, cover the pan and bring to the boil.
  
7. Turn down the heat and leave to simmer for 1½ to 2 hours, or until the sauce has reduced and the lamb is tender.
 
8. Taste and season if required. Set aside to cool a little.
  
9. Remove any excess bones and fat from the casserole before serving.
 
   
 


Serve with:


Roasted Greek potatoes, feta cheese (which melts into the sauce), a fresh, full flavoured Greek salad and some bread to soak up the delicious garlic and oregano sauce.
