Greek Salad
"In Greece, we always serve this salad to accompany lunch or dinner. It is very easy to prepare. The secret is in the freshness of the vegetables, and the quality of the cheese and the olive oil. You should select Greek feta cheese and good Greek olive oil. I suggest visiting the grocery markets in the area where local producers sell really fresh seasonal fruit and vegetables."

Ingredients (Serves 4 as a starter/side dish, 2 as a main):
4 medium sized tomatoes, cut into 8 pieces
1 cucumber, cut into round pieces
1 green pepper, cut into round pieces
1 onion, cut into round pieces
300g feta cheese
Greek extra virgin olive oil
Oregano
Salt
How to cook this dish:
1. Mix the vegetables together in a salad bowl.
2. Sprinkle with salt and oregano and add olive oil.
3. Put feta cheese over the top of the salad, either as a whole or crumpled into cubes.
4. Finish with some more oregano.

Fresh bread from the local bakery and a chilled glass of Greek white wine.
