Baked Spicy Stuffed Aubergines



"This is a fairly basic and simple dish that only takes about half an hour to prepare. This dish always reminds me of Crete, as the aubergine is such a distinctly Greek ingredient."

Ingredients (Serves 4-6):


Stuffed Aubergines

4 medium aubergines
4 medium tomatoes
1 onion
6 cloves of garlic
1 hot red chilli
A handful chopped coriander
Salt and freshly ground black pepper
2 tbsp olive oil


How to cook this dish:


   
1. Slice the aubergines in half along their length and place open on a baking sheet. Scoop out the cores and chop them along with the chilli and coriander.

2. Finely chop the onion, garlic and tomatoes and add to the chopped aubergine cores.

3. Add salt and pepper to taste and stir in a little olive oil.

4. Spoon the mixture into the aubergine skins, drizzle with olive oil and sprinkle with a pinch of salt.

5. Bake in a pre-heated oven (Gas 6 / 200° Celcius) for 18 - 22 minutes until evenly browned on top.

6. Garnish with coriander and serve.
