Halloumi with Watermelon & Toasted Pine Nuts
"When I was younger, we lived in Cyprus for several years, and dishes with halloumi are extremely popular there. You will find at least one in every local restaurant. This one is an ideal lunch dish, as it is quick, filling and looks pretty enough to impress guests on a summer afternoon."

Ingredients (Serves 4):
1 small watermelon
1 packet halloumi cheese
55g pine nuts
150g mixed salad leaves
How to cook this dish:
1. Slice the watermelon and remove outer green skin.
2. Cut halloumi into 2 cm slices.
3. Toast the pine nuts in a pan for 1-2 minutes over medium heat without any oil.
4. Arrange salad leaves on a plate with 2-3 slices of watermelon and add halloumi and pine nuts.
