Custard-style Barbados toast
"I am always looking for a quick breakfast dish to serve my children, whether for school or on holiday, that is quick, delicious, and nutritious and tastes homemade. I have found that with this recipe. You get protein, carbs and dairy in one go, and my children love it!
All the ingredients are grocery staples, so are easily obtainable locally."

Ingredients (Serves 1):
2 slices of bread
1 egg
1/3 cup milk
1 tbsp brown sugar
¼ tsp salt
Cinnamon and nutmeg to taste
How to cook this dish:
1. Beat the eggs, sugar, salt, then blend in milk and essences.
2. Dip the bread slices in the mixture and fry in a lightly oiled pan over a medium heat.
3. Cover the pan as you fry for 1 minute on each side, or until golden brown.
4. Sprinkle with icing sugar.

Serve with:
Your favourite syrup, strawberries or any fruit. Meats also tend to balance the dish with a savoury addition.
