Broich Nettle Soup
"This is a delicious summer dish, very simple to make. You can substitute with sorrel if you don't want to deal with the stinging nettles."

Ingredients:
Nettles
1 onion
1 clove of garlic
50g butter
Vegetable stock
Cream to garnish
How to cook this dish:
1. Using a pair of leather gloves cut or tear the top leaves off as many nettles as you can tackle.
2. Cook an onion and a clove of garlic in some butter.
3. Wash the nettles (using heavy rubber gloves); shake them dry and add them to the transparent onion.
4. Soften the nettles and put it all in the blender with enough seasoned stock (cubes if necessary) to make a fairly thick soup.
5. Serve with some cream on top.
