Seafood Pasta



"We first had this dish about 15 years ago at Jessie's Dockside Restaurant in Florida, located on the causeway across Honeymoon Island just north of Clearwater Beach. It was our eldest son's 21st birthday and we celebrated it with dinner in the Captain's Cabin overlooking the marina. My wife and I both chose the seafood pasta. It was so good we asked to see the chef and he came to the table and rattled off the ingredients to us. My wife wrote it down on a table napkin and has been able to faithfully reproduce it ever since. The restaurant is long gone but fortunately my wife can still conjure up that memorable first time when we had this dish."

Ingredients (serves 2):


Seafood Pasta 16 medium shrimps, uncooked
226g grouper, cut into pieces
226g mahi mahi, cut into pieces
3 tbsp chopped garlic
2 shallots, diced
2 chopped tomatoes, deseeded and without skin
350 ml dry white wine
110 ml sherry
2 tbsp lemon juice
2 tbsp olive oil
450g fettuccini, cooked al-dente
220 ml Alfredo sauce
Grated pamesan
Chopped fresh parsley to garnish 


How to cook this dish:


   
1. Sauté the garlic and shallots in olive oil for 2 minutes. 

2. Add the white wine, sherry and lemon juice and reduce by half. 

3. Add the shrimps, grouper, mahi mahi and tomatoes then sauté over medium heat until cooked thoroughly.

4. Add the Alfredo sauce and bring to boil.

5. Remove from heat, place the fettuccini on plates and spoon the seafood and sauce over the top.

6. Top off with grated parmesan cheese and chopped parsley.
